Cake

  • 11⁄2 cups Quest® Vanilla Milkshake Protein Powder
  • 3⁄4 cup nonfat Greek yogurt
  • 1⁄3 cup no-sugar-added applesauce
  • 1⁄2 cup zero-calorie sweetener
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1⁄4 cup almond flour
  • 1 tablespoon oat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1⁄4 teaspoon salt
  • 2 tablespoons coconut oil, melted
  • Nonstick cooking spray

Topping

  1. In a small bowl, add topping ingredients.
  2. Mix together, and set aside.

Cake

  1. Preheat oven to 350°F.
  2. In a large mixing bowl, mix yogurt and applesauce.
  3. Whisk in sweetener, egg whites, and vanilla extract.
  4. In a separate medium bowl, stir together Quest Protein Powder®, almond flour, oat flour, cinnamon, baking powder, and salt.
  5. Add dry ingredients to wet ingredients, and mix well.
  6. Slowly add coconut oil, stirring to combine.
  7. Spray an 8-by-8-inch baking pan with cooking spray.
  8. Pour half the batter into pan.
  9. Sprinkle half of topping mixture over batter.
  10. Cover with remaining batter, and sprinkle with remaining topping mixture.
  11. Bake for 25 minutes, or until an inserted toothpick comes out clean.
  12. Cool for at least 5 minutes before cutting.
