  • 2 tablespoons nonfat Greek yogurt
  • Pinch of zero-calorie sweetener

PREP:   COOK:

Crumble

  1. Preheat oven to 400°F.
  2. Break Quest Bar® into small pieces and place on a nonstick baking sheet.
  3. Bake for 4 to 5 minutes or until golden brown. Remove and let cool.
  4. Add pieces to a mini-blender and process to crumbs. Stir in coconut oil, oats, sweetener and butter extract.

Filling

  1. Reset oven to 350°F.
  2. In a medium bowl, add Quest Protein Powder®, peaches, sweetener, and cinnamon. Stir.
  3. Coat two ramekins with cooking spray. Divide peach mixture between ramekins. Sprinkle with crumble.
  4. Bake for 18 to 20 minutes. Let cool for 5 minutes.

Topping

  1. In a small bowl, combine yogurt and sweetener. Spoon 1 tablespoon on top of each cobbler, and serve.
