Jelly

  • 12 medium strawberries, chopped
  • 1⁄4 cup water
  • 2 tablespoons zero-calorie sweetener

Filling

Topping

  • 2 tablespoons peanuts, chopped
  • 6 strawberries, halved

Assembly

  • 12 (2-ounce) parfait cups

Crumble

  1. Preheat oven to 400°F.
  2. Break Quest Bars® into small pieces. Place on a nonstick baking sheet and bake for 5 to 6 minutes, or until golden brown. Remove from oven and cool slightly.
  3. Once bar pieces have cooled, add to a mini-blender and pulse to crumbs. Set aside.

Jelly

  1. In a medium saucepan, heat strawberries, water, and sweetener for 5 minutes, stirring occasionally. Remove from heat and let cool.
  2. In a mini-blender, add mixture and blend until smooth. Pour into a squeeze bottle, and set aside.

Filling

  1. In a blender, add all filling ingredients and blend until smooth and thick.
  2. Fill a large pastry bag with filling.

Assembly

  1. Pipe a tablespoon of peanut butter filling into each parfait glass.
  2. Squeeze 1 12 teaspoons of strawberry jelly on top. Add 1 tablespoon of crumble.
  3. Repeat the three layers.
  4. Top with small dollop of peanut butter filling, sprinkle with peanuts, and finish with a strawberry half.
