Almond Thumbprint Cookies

YIELDS:

  • 1 Vanilla Almond Crunch Quest Bar®
  • 1 tablespoon almond milk
  • 2 tablespoons almond flour
  • 2 tablespoons zero-calorie sweetener
  • 1 teaspoon coconut flour
  • 1 teaspoon almond extrac
  • 2 teaspoons low-sugar raspberry jam

PREP:   COOK:

  1. Preheat oven to 350°.
  2. In a small bowl, microwave unwrapped Quest Bar® and almond milk for 45 seconds.
  3. Add almond flour, sweetener, coconut flour, and almond extract. Mix together until smooth.
  4. Place in refrigerator for about 10 minutes.
  5. Roll chilled dough into four balls, and press thumb in center of each. Fill each cookie thumbprint with a 12 teaspoon of jam.
  6. Bake for 12 minutes or until golden brown.
  7. Remove and let cool.
