Break both Quest Bars® into small pieces. Set aside.
In a medium bowl, stir together applesauce, cashew butter, and vanilla extract until well combined.
Stir in Quest Protein Powder®, sweetener, cocoa powder, and salt until a thick batter is formed.
Stir in half of the broken Quest Bar® pieces.
Spray a 9-by-5-inch loaf pan with cooking spray and spread batter evenly across the bottom. Sprinkle the top with remaining Quest Bar® pieces and pecans.
