1 tablespoon plus 1 tablespoon zero-calorie sweetener
3⁄4 teaspoon natural peanut butter
3 tablespoons sugar-free chocolate chips
1 tablespoon sugar-free raspberry jam

PREP: COOK:
Break Quest Bar® into small pieces.
In a microwave-safe bowl, add Quest Bar® pieces, almond milk, and 1 tablespoon of sweetener. Microwave for 1 minute or until melted.
Add in Quest Protein Powder® and peanut butter. Whisk until thick and smooth.
Divide mixture into eight even pieces, and place on a nonstick baking sheet. Place in freezer for 5 minutes.
Remove from freezer, roll into round balls, and set aside.
In a microwave-safe bowl, add remaining sweetener, chocolate chips, and jam. Microwave for 20 seconds, and stir. Microwave for 20 additional seconds. Stir until smooth.
Dip each PB&J ball in the chocolate mixture and coat evenly. Set each truffle on wax paper.
Refrigerate for one hour, or until ready to serve.
