YIELDS:

Donut

  • 1 Peanut Butter & Jelly Quest Bar®
  • 1 scoop Quest® Peanut Butter Protein Powder
  • 1 egg white
  • 1⁄4 cup unsweetened almond milk
  • 1⁄4 cup zero-calorie sweetener
  • 2 tablespoons unsweetened applesauce
  • 1⁄2 tablespoon peanut butter
  • 1⁄2 teaspoon vanilla extract
  • 1⁄2 tablespoon coconut oil, melted
  • 2 tablespoons coconut flour
  • 2 tablespoons almond flour
  • 1⁄2 teaspoon baking powder
  • 1⁄4 teaspoon baking soda
  • Pinch of salt
  • Nonstick cooking spray
  • 2 tablespoons sugar-free strawberry jelly

  • 1 tablespoon peanuts, chopped

PREP:   COOK:

Donut

  1. Preheat oven to 350°F.
  2. In a mixing bowl, stir egg white, almond milk, sweetener, applesauce, peanut butter, vanilla, and coconut oil.
  3. In another bowl, combine Quest Protein Powder®, coconut flour, almond flour, baking powder, baking soda, and salt.
  4. Add wet ingredients to dry ingredients and stir until smooth.
  5. Break Quest Bar® into small pieces and stir into batter.
  6. Spray a donut pan with cooking spray.
  7. Fill each donut mold halfway full. Place jelly into a piping bag and pipe a thin line of jelly in the center of each donut. Add the rest of the batter to the molds.
  8. Bake for 9 to 10 minutes or until golden brown. Let cool.

Drizzle

  1. Stir together drizzle ingredients until smooth.
  2. Drizzle on top of each donut.

Topping

  1. Top with peanuts.
