Lemon Coconut Shortbread Cookie
- Preheat oven to 350°F.
- In a microwave-safe bowl, microwave unwrapped Quest Bar® for 10 seconds.
- Add in Quest Protein Powder®, lemon juice, almond flour, and sweetener.
- Knead with hands until a dough forms.
- Press into two circles and place on a nonstick baking sheet.
- Top each with coconut flakes. Bake for 8 minutes or until golden brown. Let cool.
- In a small bowl, mix glaze ingredients and drizzle over the top of each cookie.
