Lemon Coconut Shortbread Cookie

Cookie

  1. Preheat oven to 350°F.
  2. In a microwave-safe bowl, microwave unwrapped Quest Bar® for 10 seconds.
  3. Add in Quest Protein Powder®, lemon juice, almond flour, and sweetener.
  4. Knead with hands until a dough forms.
  5. Press into two circles and place on a nonstick baking sheet.
  6. Top each with coconut flakes. Bake for 8 minutes or until golden brown. Let cool.

Glaze

  1. In a small bowl, mix glaze ingredients and drizzle over the top of each cookie.
