  1. Break both Quest Bars® into small pieces. Add to a medium microwave-safe bowl with 12 cup of cashew milk. Microwave for 1 minute and stir until smooth.
  2. Place mixture into blender and add Quest Protein Powder®, remaining cashew milk, yogurt, sweetener, rum extract, and half of the pineapple tidbits.
  3. Blend for 30 seconds. Stir in remaining pineapple tidbits and shredded coconut.
  4. Pour contents into an ice cream machine and follow manufacturer’s instructions (ice cream should be ready within 15 minutes).
  5. Serve immediately. (For firmer ice cream, place into bowl and freeze for 2 hours).
