Dough

  • 2 scoops Quest® Cinnamon Crunch Protein Powder
  • 3⁄4 cup almond flour
  • 2⁄3 cup unsweetened almond milk
  • 1⁄2 cup coconut flour
  • 1⁄4 cup egg whites
  • 1⁄4 cup zero-calorie sweetener
  • 3 teaspoons cinnamon
  • 11⁄2 teaspoon baking powder
  • 1 teaspoon vanilla extract

Dough

  1. Pre heat oven to 350°F.
  2. In a medium bowl, add Quest Protein Powder™, almond flour, coconut flour, sweetener, cinnamon and baking powder. Mix until powders are combined.
  3. Add almond milk, egg whites and vanilla extract. Mix until dough forms.
  4. Roll dough out to 12 inch. Using a 212’x 2 12’ square cookie cutter, cut eleven squares.
  5. On a baking sheet with parchment paper, place squares and bake for 16-18 minutes.

Icing

  1. In a small bowl, add Quest Protein Powder™, cream cheese, sweetener and almond milk.
  2. Mix until smooth.
  3. Drizzle evenly over each square.
