Crust

  1. Preheat oven to 350°F.
  2. Microwave unwrapped Quest Bars® for 12 seconds.
  3. Mash together bars and sweetener, then divide into four even pieces.
  4. Spray four small ramekins with cooking spray. Press bar pieces into the bottom and up the sides of each ramekin.
  5. Bake for 7 to 8 minutes, or until golden brown. Remove to cool.

Filling

  1. In a stand mixer, add Quest Protein Powder®, yogurt, pudding mix, banana extract, and sweetener. Beat for 2 minutes.
  2. Once smooth, chill filling for 1 hour.
  3. Spoon filling evenly into crusts.
  4. Sprinkle each pie with crushed peanuts.
