Dark Chocolate

Biscotti

  1. Preheat oven to 300°F.
  2. In a medium bowl, combine Quest Protein Powder®, almond flour, sweetener, eggs, almond extract, and baking powder. Mix together until completely combined.
  3. Stir in almonds and cherries.
  4. Form dough into a 7-by-4 12-inch biscotti log, and place on a baking sheet lined with parchment paper.
  5. Bake for 35 to 40 minutes, rotating baking sheet after 20 minutes. Cool for 1 hour on a cooling rack.
  6. Once cooled, cut biscotti log into sixteen pieces, about 12-inch thick.
  7. Place the biscotti pieces on a baking sheet lined with parchment paper. Bake for 8 minutes, then turn pieces over and bake for an additional 8 minutes.
  8. Stand biscotti slices upright and bake for 6 to 8 minutes, or until crispy.
  9. Cool biscotti for about 1 hour on a cooling rack.

Dark Chocolate

  1. In a medium microwave-safe bowl, add chocolate chips, 3 tablespoons of the almond milk, and sweetener. Microwave for 20 seconds, and stir. Repeat until chocolate is fully melted.
  2. Stir in Quest Protein Powder® until mixture is thick and fully combined.
  3. Stir in remaining tablespoon of almond milk until smooth.

Assembly

  1. Dip the bottom of each biscotti piece in chocolate mixture until lightly coated, and place on parchment paper.
  2. Let chocolate set for about 1 hour, and serve.
