YIELDS:

  • 4 scoops Quest® Vanilla Milkshake Protein Powder
  • 1⁄2 cup zero-calorie sweetener
  • 1⁄4 cup coconut flour
  • 1⁄4 cup almond flour
  • 11⁄2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon nutmeg
  • 3 eggs
  • 1⁄2 cup unsweetened applesauce
  • 1⁄4 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 medium zucchinis
  • Nonstick cooking spray

PREP:   COOK:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, add Quest Protein Powder®, sweetener, coconut flour, almond flour, cinnamon, baking powder, baking soda, salt, and nutmeg, and stir.
  3. Add eggs, applesauce, almond milk, and vanilla extract.
  4. Using a hand mixer, mix on low speed until well combined.
  5. Finely grate zucchinis onto a cutting board.
  6. Using a clean dish towel, squeeze out liquid from the zucchini so it measures 1 packed cup. Discard liquid and any extra zucchini.
  7. Stir zucchini into the batter.
  8. Spray an 8-by-4-inch loaf pan with cooking spray.
  9. Pour batter into pan.
  10. Bake for 35 to 40 minutes, or until an inserted toothpick comes out clean.
  11. Let cool for 5 to 10 minutes.
  12. Cut into six even pieces, and serve.
