Lemon-Dill Cream Cheese with Smoked Salmon

YIELDS:

  • 1⁄2 scoop Quest® Multi-Purpose Mix Protein Powder
  • 2 ounces smoked salmon
  • 3 tablespoons unsweetened almond milk
  • 2 tablespoons reduced-fat cream cheese
  • 1 tablespoon light sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh dill, chopped
  • 1⁄4 teaspoon kosher salt
  • 1 tablespoon small capers

PREP:   COOK:

  1. Slice smoked salmon into twelve thin pieces and set aside.
  2. In a small bowl, mix together Quest Protein Powder®, almond milk, cream cheese, sour cream, lemon juice, lemon zest, dill, and salt until smooth.

Assembly

  1. Spread each crostini with 2 teaspoons of cream cheese spread.
  2. Top with a slice of smoked salmon, and sprinkle with capers.
