1⁄2 scoop Quest® Multi-Purpose Mix Protein Powder

1 cup of basil, loosely packed

3 tablespoons water
-
5 teaspoons Parmesan cheese, grated

1 tablespoon pine nuts

1 tablespoon extra-virgin olive oil
-
1⁄2 teaspoon garlic, minced
-
1⁄4 teaspoon zero-calorie sweetener
-
1⁄4 teaspoon black pepper
-
1⁄8 teaspoon kosher salt
Shrimp
-
Nonstick cooking spray
-
6 large shrimp, peeled and deveined
-
Pinch of salt
-
Pinch of pepper
Directions
PREP: COOK:
Pesto
- In a mini-blender, add basil, water, Parmesan cheese, pine nuts, olive oil, and garlic. Blend into a paste.
- Add Quest Protein Powder®, sweetener, pepper, and salt. Blend until well combined, scraping sides if needed.
Shrimp
- On medium-high heat, spray sauté pan with cooking spray.
- Once hot, add shrimp.
- Add salt and pepper to shrimp, and cook for 3 minutes.
- Flip and cook shrimp for 2 minutes. Remove from heat.
- Once shrimp is slightly cooled, butterfly each shrimp in half.
Assembly
- Spread pesto on each crostini.
- Top with half a shrimp.
