Banana Nut Bread

YIELDS:

  • 4 scoops Quest® Banana Cream Protein Powder
  • 1⁄2 cup almond flour
  • 1⁄2 cup zero-calorie sweetener
  • 1⁄4 cup oat flour
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp baking soda
  • Pinch of salt
  • 1⁄2 cup egg whites
  • 1 medium banana, mashed
  • 1⁄4 cup unsweetened almond milk
  • 1⁄4 cup apple sauce
  • 2 eggs
  • 1 tsp banana extract
  • 1⁄4 cup chopped walnuts

PREP:   COOK:

  1. Preheat oven to 300°F.
  2. In a medium bowl, combine all ingredients except walnuts.
  3. Using a hand mixer, mix until smooth.
  4. Add walnuts and stir until completely combined.
  5. Coat a 9-by-5-inch loaf pan with cooking spray.
  6. Pour batter into pan and bake for 50 minutes. Pull out and cover the top with foil. Bake an additional 20 minutes. Cool slightly before slicing.
