  • 11⁄2 bags Quest® Sea Salt Chips
  • 3 tablespoons pecans, chopped
  • 2 tablespoons shredded low-fat coconut 
  • 1 teaspoon zero-calorie sweetener
  • 1⁄4 teaspoon cayenne pepper
  • Pinch of salt
  • 1⁄4 cup sugar-free syrup
  • 12 ounces chicken breast, cubed into 20 pieces
  • 2 tablespoons coconut oil




  1. Crush Quest Protein Chips™, then pour into a mini food processor with pecans, coconut, sweetener, cayenne pepper, and salt. Pulse to coarse crumbs and set aside.
  2. Pour syrup into a small bowl. Dip 3 to 4 chicken cubes into the syrup at a time. Coat each piece lightly with crumbs.
  3. In a medium sauté pan, heat coconut oil.
  4. When oil is hot, drop in chicken pieces, then reduce to medium-low heat.
  5. Cook for 3 to 4 minutes.
  6. Flip over and cook for another 2 to 3 minutes, or until cooked through.
  7. Remove and set aside.


  1. Heat a mini-waffle iron to medium-low heat.
  2. In a medium bowl, combine egg, milk, butter, vanilla extract, sweetener, and baking powder. Whisk together until completely combined.
  3. Add both Quest Protein Powders® and Brown Rice Powder/Flour. Whisk until smooth and thick.
  4. Spray waffle iron with cooking spray.
  5. Add waffle batter and cook for 1 minute.
  6. Repeat with remaining batter.


  1. Add one chicken bite to each mini waffle.
  2. Repeat with remaining waffles and bites. Top with sugar-free syrup if desired, and serve.
