Red Pepper Spread with Artichokes

YIELDS:

  • 11⁄2 scoops Quest® Multi-Purpose Mix Protein Powder
  • 4 pieces canned artichoke hearts
  • 1⁄2 cup roasted red peppers
  • 4 tablespoons water
  • 1⁄4 teaspoon garlic powder
  • 1⁄4 teaspoon black pepper
  • 1⁄2 teaspoon kosher salt
  • 1⁄4 teaspoon zero-calorie sweetener
  • 2 tablespoons red bell pepper, diced

PREP:   COOK:

  1. Dice artichoke hearts into small chunks and set aside.
  2. In a mini-blender, combine Quest Protein Powder®, roasted red peppers, water, garlic powder, pepper, salt, and sweetener. Blend until smooth.
  3. Fold bell peppers into mixture.

Assembly

  1. Spread red pepper mixture on each crostini, and top with artichoke pieces.
