Egg Wash

  • 2 eggs
  • 1 egg white
  • 1⁄4 cup unsweetened almond milk
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon zero-calorie sweetener

Topping

  1. Preheat oven to 350°F.
  2. Break Quest Bar® into small pieces and place on a nonstick baking sheet lined with parchment paper.
  3. Bake for 5 to 6 minutes, or until crisp. Cool slightly.
  4. Add Quest Bar® pieces to a mini-blender and pulse to large crumbs. Set aside.

  1. Break Quest Bar® into small pieces and place on a nonstick baking sheet lined with parchment paper.
  2. Bake for 5 to 6 minutes, or until crisp. Cool slightly.
  3. Reset oven to 300°F.
  4. Add Quest Bar® pieces to mini-blender and process to fine crumbs.
  5. In a medium bowl, add crumbs, Quest Protein Powder®, sweetener, baking powder, and salt. Stir well.
  6. Add almond milk, applesauce, egg whites, egg, coconut oil, xanthan gum, cinnamon, and vanilla extract. Mix to form a thick batter.
  7. Spray a 9-by-4-inch bread pan with cooking spray and transfer dough to pan. Bake for 44 to 47 minutes, or until an inserted toothpick comes out clean.
  8. Remove and let cool.
  9. Cut into eight slices.

Egg Wash

  1. In a pie pan, mix together eggs and egg white, almond milk, cinnamon, and sweetener. Set aside.

Vanilla Syrup

  1. In a mini-blender, add Quest Protein Powder®, almond milk, and sweetener. Blend until smooth. Set aside.

Toasting

  1. Dip both sides of bread into egg wash.
  2. Heat a nonstick skillet to medium heat. Pan fry each side of egg-washed bread until golden brown.

Assembly

  1. Plate and drizzle vanilla syrup over French toast.
  2. Sprinkle with Quest Bar® topping, and serve.
