Chicken Parmesan

  • 1⁄2 cup tomato sauce
  • 1 tablespoon fresh basil, chopped
  • 1⁄2 teaspoon garlic powder
  • 1⁄4 teaspoon zero-calorie sweetener
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon pepper


  • 2 tablespoons Parmesan cheese, grated
  • 4 ounces mozzarella cheese, sliced



  1. Using a sharp knife, cut each chicken breast in half, then butterfly each chicken half.
  2. In a medium bowl, mix Quest Protein Powder®, Italian seasoning, garlic powder, pepper, and salt. Set aside.
  3. In a small bowl, lightly beat eggs with water and 14 cup of the Parmesan cheese.
  4. In a mini-blender, blend Quest Protein Chips™ into fine crumbs.
  5. Pour chip crumbs into a shallow dish, and add the remaining 14 cup Parmesan cheese. Stir well.


  1. Mix together sauce ingredients, and set aside.


  1. Preheat broiler to high.
  2. Take each piece of chicken and dredge in the powder/seasoning mixture.
  3. Dip into egg wash, allowing excess to drip off.
  4. Coat generously in Quest Protein Chip™ mixture.
  5. In a medium frying pan, heat 14 cup of the high-oleic sunflower oil on medium-high heat.
  6. Place three chicken pieces in oil, and fry for 4 to 5 minutes per side until golden brown and cooked all the way through.
  7. Remove and place on a nonstick baking sheet.
  8. With remaining oil and chicken, repeat steps 4-6.
  9. Top each chicken breast with sauce. Divide and sprinkle the 2 tablespoons of Parmesan cheese over chicken breasts.
  10. Cut mozzarella into 6 slices and lay on top of each chicken breast.
  11. Broil chicken for 2 minutes, or until cheese is completely melted.
  12. Remove from oven, and serve.
