1 Scoop Quest® Multi-Purpose Mix Protein Powder
3 bags Quest® Sea Salt Protein Chips
3 (4-ounce) boneless, skinless chicken breasts
1 teaspoon Italian seasoning
1⁄ 2 teaspoon garlic powder
1⁄ 2 teaspoon black pepper
1⁄2 teaspoon salt2 eggs2 tablespoons water1⁄4 cup plus1⁄4 cup Parmesan cheese, grated1⁄4 cup plus1⁄4 cup high-oleic sunflower oil (used for frying)
Sauce
1⁄2 cup tomato sauce
1 tablespoon fresh basil, chopped
1⁄2 teaspoon garlic powder
1⁄4 teaspoon zero-calorie sweetener
1⁄4 teaspoon salt
1⁄4 teaspoon pepper
Topping
2 tablespoons Parmesan cheese, grated
4 ounces mozzarella cheese, sliced

Chicken
Using a sharp knife, cut each chicken breast in half, then butterfly each chicken half.
In a medium bowl, mix Quest Protein Powder®, Italian seasoning, garlic powder, pepper, and salt. Set aside.
In a small bowl, lightly beat eggs with water and

cup of the Parmesan cheese.
In a mini-blender, blend Quest Protein Chips™ into fine crumbs.
Pour chip crumbs into a shallow dish, and add the remaining

4
cup Parmesan cheese. Stir well.
Sauce
Mix together sauce ingredients, and set aside.
Assembly
Preheat broiler to high.
Take each piece of chicken and dredge in the powder/seasoning mixture.
Dip into egg wash, allowing excess to drip off.
Coat generously in Quest Protein Chip™ mixture.
In a medium frying pan, heat

cup of the high-oleic sunflower oil on medium-high heat.
Place three chicken pieces in oil, and fry for 4 to 5 minutes per side until golden brown and cooked all the way through.
Remove and place on a nonstick baking sheet.
With remaining oil and chicken, repeat steps 4-6.
Top each chicken breast with sauce. Divide and sprinkle the 2 tablespoons of Parmesan cheese over chicken breasts.
Cut mozzarella into 6 slices and lay on top of each chicken breast.
Broil chicken for 2 minutes, or until cheese is completely melted.
Remove from oven, and serve.
