YIELDS:

Chicken & Snow Peas

  • 2 (8-ounce) boneless, skinless chicken breasts, cubed
  • 11⁄2 tsp salt
  • 3 cups water
  • 4 ounces snow peas
  • Nonstick cooking spray

Chicken & Snow Peas

  1. In a small bowl, combine chicken and salt, and set aside.
  2. In a small pot, add water and bring to a boil.
  3. Add snow peas to pot and cook for 3-4 minutes. Drain and set aside.

Sauce

  1. In a small bowl, whisk together Quest Protein Powder™, water, soy sauce, sweetener, garlic, ginger, and black pepper.

Assembly

  1. Coat a large saucepan with cooking spray, add chicken, and cook over medium-high heat, stirring until golden.
  2. Add snow peas and caramel sauce, and stir.
  3. Bring to a low simmer, stirring occasionally, for 5 minutes.
  4. Divide onto 4 plates, and serve immediately.
